I’m so excited to share that Desi Cultures is back.
Originally started by Shubhra Chatterji in 2020 as an online gathering for fermentation enthusiasts, Desi Cultures returns this July as an annual fermentation festival-conference exploring fermentation through culture, science, taste, tradition, and innovation.

Over the course of a week, we'll bring together 15+ speakers from India and beyond to explore fermentation from multiple perspectives — from regional food traditions and microbial science to contemporary food industries, cultural knowledge, ecology, and food futures.
Desi Cultures is built around a simple question:
What happens when we centre fermentation knowledge, practices, ingredients, and ideas from the Indian subcontinent within global conversations around food?
Whether you're a practitioner, researcher, chef, student, maker, or simply curious about fermentation, the festival is designed to offer new perspectives, meaningful conversations, and opportunities for connection.
